Another day, another poll, another “yes”, another recipe posted. Seriously though, these awesome banana pancakes are so much easier to cook than your usual pancakes and, technically, healthier as well. They are also sweet in and of themselves, without using other toppings if you want to cut back on calories.
Servings: 1 (for 2, double every ingredient)
Time: 20 minutes
Coconut Oil (or vegetable/sunflower seed)
30g Rolled Oats
½ teaspoon Cinnamon
Strawberries/Nutella/Syrup for topping
- Peel & slice the banana.
- Blend the banana, eggs, oats, and cinnamon until smooth.
- Grease a small pan with the coconut oil enough to ensure that the mixture will not stick to the pan, and warm up at medium heat.
- Drop 2-3 tablespoons of the mixture into the pan and cook for 3 minutes each side until you finish the mixture.
- Top with strawberries or Nutella or syrup and enjoy!
