Baked Garlic Parmesan Carrot Fries

We wanted a quick and healthy midnight snack last week (we’re late night peeps) and these baked garlic parmesan carrot fries were perfect for us. Just chop, add some seasoning and pop ’em in the oven for 30 minutes and you got yourselves a great alternative to potato fries. You can also make the dipping sauce that Bianca loved. It’s all below. 🙂

Servings: 2
Time: 40 minutes

INGREDIENTS


Carrots:

2 Carrots
1 tablespoon Olive Oil
¼ cup Parmesan (works with Emmenthaler as well)
1 tablespoon Garlic Powder
1 teaspoon Pepper
¼ cup Fresh Parsley
½ teaspoon Salt

Dipping Sauce:

2 tablespoons greek yogurt
1 tablespoon lemon juice
½ teaspoon salt
1 teaspoon pepper
½ teaspoon Garlic Powder

DIRECTIONS


Carrots:

  1. Preheat oven to 400°F/200˚C.
  2. Wash and peel the carrots.
  3. Slice the carrots in half, then slice each half into thirds lengthwise.
  4. In a large bowl, mix the carrots with the olive oil, garlic powder, parmesan, parsley, salt, and pepper.
  5. Spread on a baking sheet.
  6. Bake for 30 minutes. You can leave them less, depends on how crispy you want them.
  7. Ta-dam!
Dipping Sauce:

In a small bowl, mix together the greek yogurt, lemon juice, salt, garlic powder, and pepper.
