After watching the What the Health documentary on Netflix a while back, I started getting queasy when thinking about eating meat and processed foods. So I tried going vegetarian. It didn’t last me long (unfortunately). I lasted a week eating fruits, veggies, and cereals. This cinnamon apple oatmeal is one of the meals I ate in the morning for that vegetarian week. I had to find something to replace the usual eggs and bacon.
Oatmeal recipes are super easy and fast to make and can be very versatile. You can replace the water with milk. Add sugar or honey if you want at any point in the preparation (bear in mind that it isn’t very sweet). Add almonds or pecan instead of or with the raisins.
I recommend watching the documentary if you haven’t already. It’s very eye-opening. The main reason why I didn’t last long going vegetarian was my own lack of knowledge regarding vegan/vegetarian recipes and what it all involves. There will need to be a lot more meal planning and research to go into it before I start again. I’m definitely not giving up. 🙂

1 cup Oats (I used Quaker Oats)
⅔ cup Apple Juice
1⅓ cups Water
½ teaspoon Cinnamon
½ cup Raisins
- Combine oats, apple juice, water, and cinnamon in a saucepan over medium heat.
- Bring to a simmer, then cover and cook for 3 minutes.
- Remove from heat and stir in the raisins. This is where you would add sugar, honey or other sweeteners.
- Let stand for 3 -5 minutes so that the mixture incorporates well, and voila! You’ve got your breakfast.
