This cocoa chia pudding is another one of the dishes I discovered through the 8fit app. It’s usually where I go when I don’t want to risk and I’m looking for recipes that I know are going to work 100%.
I’ve never used chia seeds or cottage cheese in a pudding before so I was worried a bit about what it will taste like, but I was pleasantly surprised. Once everything is well blended through, you will only taste the sweet honey (or agave syrup) and smell the homely cocoa. You’ll probably also feel quite good about yourself eating a sinfully tasty snack (or breakfast!) but with healthy ingredients.
Servings: 1 (for 2, double every ingredient)
Time: 10 minutes
2½ tablespoons Cocoa Powder
50g Chia Seeds
350g Cottage Cheese
5 tablespoons Honey or Agave Syrup
2 teaspoons Vanilla Extract
- Soak the chia seeds in water until they gel, 5-10 minutes.
- Add the gelled chia seeds, cottage cheese, honey/agave syrup, vanilla, cocoa powder and water together and blend until smooth.
