I had at least two amazing drinks while in Palm Beach for my best friend’s wedding at The Breakers Hotel. If you follow me on Instagram you’ve probably already seen them. They were so good that I had promised myself to try and make them at home as well. One was the delicious Piña Colada, which is the one I’ve recreated now, and the other one is the Skinny Margarita which is reserved for this weekend (stay tuned!).
Piña Colada is a delicious rum, pineapple and coconut cocktail, served blended or well shaken with ice. Also, fun fact, piña colada has been the national drink of Puerto Rico since 1978. I used a blender to mix everything up and to cut up the ice, but you can also do without a blender by shaking the ice well or by using shaved ice.
I used a pineapple cup for serving. You can make a pineapple cup using a pineapple corer. I had a really cheap one that broke the week before, so I had to find out how to make due without one. This video helped.
Servings: 1 (for more, double each ingredient)
Time: 5 minutes
6-7 cubes Ice
1 teaspoon Sugar
1 tablespoon Coconut Cream (I couldn’t find coconut cream where I live, so instead I used this coconut liquor from Carrefour)
50ml White Rum (I used Bacardi Carta Blanco)
50ml Pineapple Juice for a more liquid consistency
- Core the pineapple using a corer or a knife. Cut up the core into chunks and use it for the drink.
- Blend the ice, pineapple chunks, sugar, coconut cream and the rum until smooth.
- Drink up!
