Because you voted “yes” on our Instagram poll regarding our latest salad, we feel obliged to share the recipe with you! The dish you voted for (or against, LOL) and that whetted your appetite a few days ago is the tuna, avocado, white bean and arugula salad. It’s a salad, so it’s easy to make, you just need to have the below mentioned ingredients.
The most precious ingredient in this salad is the tuna. We were lucky to find a can of tuna in oil with vegetables from Home Garden, which turned out to be absolutely delicious!
The salad is prepared in two steps. To make your life easier, it is recommended you prepare the sauce first. Read below to find out what ingredients you need and what to do to prepare a delicious salad! Hope you have a nice read and that you enjoy it as much as we did!
Time: 15 minutes
2 tablespoons Freshly Squeezed Lemon Juice
1 tablespoon Balsamic Vinegar
1 teaspoon Dijon Mustard
3 tablespoons Olive Oil
4 to 5 ounces Arugula
1 1/2 cups Canned White Beans
6 ounces Canned Tuna
4 ounces Parmesan
Salt & Pepper to taste
- In a small bowl, combine the freshly squeezed lemon juice, the balsamic vinegar, the Dijon mustard and salt & pepper. Add the olive oil and mix well. Taste and sprinkle more salt & pepper if needed.
- Arrange the arugula in a salad bowl and cover with the white beans, the tuna, the parmesan and the avocado. Drizzle with half the sauce, mix well and serve, adding more sauce if needed!
