Pasta alla Puttanesca with Anchovy

Considering how much I love pasta, I couldn’t believe it when I realized that we have only one pasta recipe on the blog. With the intention of sharing some of our most cooked pasta recipes, I thought about the beloved pasta alla puttanesca. A very unpretentious recipe with easily accessible ingredients, that won’t take you longer than 30 minutes to prepare. For this recipe we used anchovy, but it can be replaced with smoked sprats with very little difference in taste, or tuna. If you prefer to use tuna, keep in mind that the taste will be slightly different.

INGREDIENTS

Pasta Alla Puttanesca with Anchovy

2 cups Water
6 oz Spaghetti
4 spoons Olive Oil
3 cloves Garlic
4 file of Anchovy or Smoked Sprat
2 spoons Capers
7 oz Peeled Tomatoes
1 Small Onion
1 Jalapeno
3oz Olives
Salt & Pepper to taste

Pasta Alla Puttanesca with Anchovy

  1. Bring water to boil in a medium pot with a spoon of salt. Dice the onion and the tomatoes, and mince the garlic and the jalapeno.
  2. While we wait for the water to boil, heat the oil in a large pan over medium heat.
  3. Add the pasta to the salted water and cook until the soft, about 10 minutes.
  4. Once the oil is hot, add the onion, jalapeno, and garlic.
  5. When the onion is soft, add the olives, capers, and anchovy (or sprat), for 1 more minute.
  6. Add the tomatoes and continue to simmer and cook for about 10 minutes, until the liquid recedes and the sauce thickens.
  7. Drain the pasta and add them to the sauce, mix, blending, for about 1-2 minutes.
  8. Season with salt and pepper to taste. Split between plates and enjoy!
